Here is a simple recipe for making pancakes:


  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract (optional)


  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, vegetable oil, and vanilla extract (if using).
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix, as this can result in tough pancakes.
  4. Heat a large, nonstick skillet or griddle over medium heat. Lightly coat the surface with cooking spray or a small amount of vegetable oil.
  5. Pour 1/4 cup of the pancake batter onto the skillet or griddle for each pancake. Cook until bubbles form on the surface of the pancakes and the edges start to look dry, about 2 to 3 minutes. Flip the pancakes and cook until the other side is golden brown, about 1 to 2 minutes more.
